Oh this one is hard.  I think I'd be terrible at herbology.  Seriously my plants have learned to conserve water, I shit you not.  Maybe History of Magic as I'm a total nerd for interesting history (hello, Ravenclaw here!).  And if you're wondering what interesting history is, it's most history that isn't US history. 
I'd also love Astronomy.  OMG can you image labs in that class?  The astronomy tower... *swoon*

Sorry I love astronomy and to have an entire tower of the school dedicated for it would be amazing.  It would likely be my favorite part of the whole school.  Can't find me at night?  I probably snuck up there to stargaze.
